Shrimp, Corn and Zucchini Flatbread

Servings 6

Ingredients:
1 12oz package of SeaPak Shrimp Scampi

½ cup frozen corn kernels

1 small zucchini, sliced

1 16oz ball of pizza dough (fresh or frozen)

½ cup shredded parmesan cheese

Bench flour

1 lemon

Instructions:
PREHEAT oven to 450°F.

Prepare shrimp scampi according to package instructions. Add corn and zucchini to the shrimp scampi, stir occasionally and keep mixture warm.

Lightly flour a work surface and press your dough into a large rectangle.

Turn a baking sheet upside down (so the bottom is facing up) and spray with non-stick cooking spray.

Transfer dough to the bottom (sprayed side) of the baking sheet. Use some of the sauce from the scampi to brush over the top of the dough. Pierce dough with a fork to avoid large air bubbles.

Bake pizza dough for 12-15 minutes.

In the last 5 minutes of baking, remove the pizza from the oven and use a slotted spoon to scoop the shrimp, zucchini and corn from the sauce pan. Spread over the pizza. Cover with cheese and return to the oven to bake until cheese begins to melt.

Slice lemon and squeeze half into the scampi sauce. Pour into a small bowl to use for a pizza dipping sauce or cool down and use as salad dressing!

TO SERVE: Slice pizza and serve with dipping sauce on the side.
