Here's one:

Peter Cushing, who played Grand Moff Tarkin in Ep. IV, and Christopher Lee, who played Count Dooku in Eps. II and III, starred together in several films, notably the two Hammer films Dracula (Lee was the vampire, while Cushing played Dr. Van Helsing) and Frankenstein (Cushing played Dr. Frankenstein, while Lee was the monster). Peter Cushing was also detective Sherlock Holmes in The Hound of the Baskervilles, one of the first full-feature films to be made in color. Lee is alsodescended from a minor Italian noble house, through his mother.

Also, most of the Hoth outdoor scenes were filmed in Norway, and many of the "Rebel troopers" were members of the Norwegian ski patrol (can't remember the official name).

Finally, to prevent people from finding out inside information about Retun of the Jedi, Lucas originally gave the film the working title of Blue Harvest in its early stages.

Well, Lucas had troubles fitting all his ideas into one film, so ended up making three. (And three "prequels".)
