I had a twelve pounder, brined it overnight with salt, sugar and juniper berries, and then cooked it in a hot (400 f) oven with lots of butter. It was perfect, and only took two hours to cook.. For the dressing, I made a skillet of cornbread the day before, roasted pecans in butter, cooked two onions and three celery stalks in yet more butter, peeled and cut up an apple and combined the whole deal with some turkey stock i made yesterday out of turkey necks, which can be cheap if you shop smart. I found a bottle of cheap champagne and used it in the gravy and they thought it was gourmet stuff. Best damn Thanksgiving dinner I ever made. Apologies for bragging, but somebody has to say how good it was, and it might as well be me. |

Sounds good Paul. We usually have our dinner on Friday, but today we went Black Friday shopping at 2 am, and we haven't recovered (I just woke up about an hour ago) yet, so dinner is lookin' like Saturday. As for your stuffing/dressing- It sounds like mine except there aren't apples, and I use Swanson's canned chicken broth. |
