Corn Pudding; Side Dish

Corn pudding is one of my kids favorite side dishes. So in thought of them, I will give you this one as the first for the Board.

You will need:

1 17 oz. can of cream corn

1 17 oz. can of whole kernel corn- drained

2 eggs- beaten

1 cup (8 oz.) sour cream

1/3 cup sugar

1/2 cup melted margarine

1 pkg. Jiffy corn muffin mix


Mix all ingredients and pour into a greased 9 X 13 pan. Cover with foil and bake in oven for 40 minutes at 350 degrees. Remove foil and bake for an additional 20 minutes.

Yum Yum as my son says. ;)

There we go! This sounds wonderful!! I'll bet a couple shakes of Green Tabasco Sauce would go great on that!!!

Sounds good. I doubt Chad would eat it though, so I'd have to make it to take somewhere sometime...
