2 Tbsp vegetable shortning 4 boneless loin pork chops, trimmed, butterflied 1 tsp salt 1/2 tsp chili powder 1/4 tsp black pepper 3/4 cup lon-grain rice 1 cup chopped onion 3/4 cup chopped green bell pepper 1 (28 oz) can tomatoes 1/2 cup shredded sharp Cheddar cheese Melt shortening in a large skillet over medium heat. Cook the pork chops in the hot shortening until browned, about 6 minutes per side and drain well. Combine salt, chili powder and black pepper in a small bowl. Sprinkle on pork chops in skillet. Layer rice, onion and bell pepper ofer pork chops. Pour the undrained toatoes on top. Cook over low heat, covered, until the pork chops and rice are tender, about 35 minutes, adding water if mixture becomes too dry. Sprinkle Cheddar over the layers in the skillet. Serve hot. |

I am. She even says that. When we go out to eat, and ask where she wants to go, she'll say "As long as I don't have to cook it, I don't care where we go." :) |

My mother says the same thing. :rolleyes:
I guess I'm lucky then. My mom still loves to cook. She does Thanksgiving, Christmas and a big hors devours spread on New Years Day. It's great!! |

LMAO Mom used to, but not anymore. She's talking about getting one of those turkey roasts for Thanksgiving and Christmas. I don't blame her though, she works a lot. No time for fun and leisure. :( |
