4 slices bacon
2 cups refrigerated shredded hash brown potatoes (about half of a 20-ounce pkg)
1/4 cup chopped onion
1/4 cup chopped green sweet pepper
4 eggs
1/4 cup milk
1/2 tsp. salt
Dash black pepper
1 cup shredded cheddar cheese (4-ounces)
Bias-sliced green onions (optional)

1.In a large skillet cook bacon until crisp. Drain bacon on paper towels, reserving 2 tablespoons of the drippings in skillet. Crumble bacon; set aside.

2. In a large bowl stir together potatoes, chopped onion, and sweet pepper. Pat potato mixture evenly into the skillet. Cook, uncovered, over low heat about 7 minutes or until crisp, turning once.

3. Meanwhile, in a small bowl beat together eggs, milk, salt, and black pepper with a wire whisk or rotary beater. Pour egg mixture over potato mixture. Sprinkle with cheddar cheese and bacon. Cook, covered, over low heat for 5 to 7 minutes or until egg mixture is set. Loosen omelet; fold in half. Turn out of skillet onto serving plate. Cut into wedges to serve. If desired, garnish with green onions.

I'm going to have to try this one in the morning. I get so tired of Lauren and "her pickiness." I bet she would like this.

Tell Lauren it's this or dog food. Oh, wait, Luci...how is Ruthi's cooking. Dog food may be preferable. multitaskersmilie
