12 (12 inch) flour tortillas 2 cups Monterey Jack cheese, shredded and divided 1 (6 ounce) can crabmeat, drained 1 pound cooked medium shrimp, peeled and deveined 1 (20 ounce) can green enchilada sauce 1 (8 ounce) container sour cream 1 bunch green onions, chopped Preheat oven to 350*F Lay tortillas on a flat surface. In the middle of each tortilla, place equal amounts of cheese, crab, and shrimp, reserving some cheese to sprinkle on top of tortillas. Roll the tortillas to form enchiladas. Arrange side by side in a 9x13 inch pan. Pour green enchilada sauce over all of the enchiladas, covering the enchiladas completely. Sprinkle the cheese over the enchiladas, cover. Bake for 30 minutes. Uncover and bake for 15 more minutes. Top enchiladas with sour cream and green onions to serve. |

Mel, if you were to substitue the Jack cheese with low-fat or non-fat cheese and the sour cream with fat free sour cream, it wouldn't be too bad. And I think they make low-fat tortillas too. |
