3/4 pound flank steak 2 tsp ground cumin 2 tsp chili powder 1/4 tsp salt 1/8 tsp garlic powder 1/8 tsp black pepper 1/8 tsp ground red pepper 4 (8-inch) flour tortillas 1 tsp vegetable oil 2 cups sliced onion 1/3 cup green bell pepper strips 1/3 cup red bell pepper strips 1/3 cup yellow bell pepper strips 1 Tbsp lime juice 1/4 cup sour cream* Green salsa (optional) Cilantro sprigs (optional) Trim fat from steak. Cut steak diagonally across grain into thin slices. Combine steak and next 6 ingredients in a large zip-top plastic bag. Seal bag; shake to coat. Warm tortillas according to package directions. Heat oil in a large nonstick skillet over medium-high heat. Add steak, onion and bell peppers; saute 6 minutes or until steak is done. Remove from heat, stir in lime juice. Divide steak and vegetable mixture evenly among warm tortillas, and roll up. Serve with sour cream. If desired, serve with green salsa and garnish with cilantro sprigs. *Fat-free sour cream may be used to save fat and calories. |
