8 ounces dried pinto beans (about 1 1/4 cups) 6 cups water 1 (1-pound) beef shank 1 cup chopped onion 2 tsp salt 1/2 tsp dried thyme 1/8 tsp black pepper 2 medium all-purpose potatoes, peeled, chopped (about 2 cups) 2 medium carrots, sliced (about 1 cup) Rinse and sort the beans. Combine beans and water in a large saucepot. Bring to a boil over high heat. Reduce the heat to medium. Simmer for 2 minutes. Remove from heat; cover. Let stand for 1 hour. Add beef, onion, salt, thyme, and black pepper to bean mixture and mix well. Bring to a boil over high heat. Reduce the heat to medium. Simmer, covered, stirring occaisionally, for 1 1/4 hours. Remove beef from saucepot. Chop beef, discarding bones. Mash the beans slightly. Add beef, potatoes and carrots to the soup. Simmer, covered, until the vegetables are tender, about 30 minutes. |
