Chicken and Bacon Shish Kabobs; Main Dish

1/4 cup soy sauce
1/4 cup cider vinegar
2 Tbsp honey
2 Tbsp vegetable oil
2 green onions, minced
10 large mushrooms, cut in half
1 pound skinless, boneless chicken breasts, cut into chunks
1/2 pound sliced thick-cut bacon, cut in half
1 (8-ounce) can pineapple chunks, drained

1. If using wooden skewers, soak them in water for 30 minutes to keep them from catching on fire on grill.

2. In a large bowl, mix together soy sauce, cider vinegar, honey, vegetable oil, and green onions. Add mushrooms and chicken to mixture, stirring to coat. Cover and marinate in the refrigerator for at least 1 hour.

3. Preheat grill for high heat.

4. Wrap the chicken chunks with bacon and thread onto skewers alternately with mushroom halves and pineapple chunks. Boil remaining marinade in a small saucepan for 1 minute.

5. Lightly oil grill rack. Cook skewers on the grill 15 to 20 minutes, brushing occaisionally with boiled marinade, until bacon is crisp and chicken is no longer pink and juices run clear. 6 servings.
