3/4 pound skinless, boneless chicken breast halves, cut into thin slices 2 Tbsp soy sauce 1 (4.9 ounce) package Rice-A-Roni Chicken & Broccoli Flavor 1 3/4 cups water 2 Tbsp creamy peanut butter 1 clove garlic, pressed 1 1/2 cups frozen pea pods 1/2 cup red bell pepper strips, cut into 2-inch pieces Peanuts (optional) 1. Toss chicken with soy sauce and set aside. 2. In a large skillet over medium heat, saute Rice-A-Roni rice-vermicelli mix according to package directions. 3. Slowly stir in water, seasoning packet, peanut butter and garlic. Stir in chicken and bring to a boil. Cover and reduce heat to low. Simmer for 12 minutes. 4. Stir in pea pods and bell pepper and return to a simmer. Cover and simmer for 3 to 5 minutes or until vegetables are tender-crisp. Stir and let stand for 3 minutes. Top with peanuts if desired. |
