When making hamburgers patties, remember that the higher percentage of fat in ground meat, the more shrinkage there after cooking. So if you're making hamburgers out of regular ground beef, form the patties so they are about 1/2 inch larger in diameter than the hamburger bun.

Place the patties on a sheet of waxed paper on a tray. Once you start grilling, just lift the corner of the waxed paper to easily remove them from the tray.
