Bacteria flourish in poultry at temperatures between 40 degrees and 140 degrees, so don't let it sit out at room temperature too long before cooking.

Bacteria on raw poultry can contaminate other food it comes in contact with, so it's vital you always use hot soapy water to thoroughly wash your hands, cutting board and any utensils used in preparation of poultry.

Never let raw juices con in contact with cooked poultry.
