Forestall flareups in one of several ways. Before beginning to grill, trim excess fat from meats or use lean ground meats, or place a drip pan immediately beneath the meats, stacking coals on either side. If you don't have a drip pan, make one out of foil. Tear off a piece on heavy-duty foil that is twice the length of your grill, then fold it in half crosswise. Bend all the edges up 1 1/2 inches. Fold the corners to the inside to reinforce them. |
