2 whole boneless, skinless chicken breasts ¼ cup olive oil 5 green onions, cut in 1-in lengths 4 shallots, sliced 24 cherry tomatoes, halved 2 red bell peppers, thinly sliced 3 garlic cloves, sliced 2 tbsp Worcestershire sauce salt and pepper Cut chicken in ½-in strips. Heat half of oil in large skillet over high heat. Add chicken and season well. Cook 3 to 4 minutes over high heat, turninng chicken over once. Remove chicken from pan and set aside. Add remaining oil to pan. When hot, add vegetables and garlic; season well. Cook 3 minutes over high heat. Return chicken to pan. Add Worcestershire sauce, mix and cook 1 minute. Servings: 4 |
