I want to make salsa...

Ok - so heres the thing. There is this store baught salsa we really love & I wanted to try to make something similar, but haven't the foggiest how to begin. I tried looking @ other salsa recipes, but nothing seems to sound good or right to me.

It's got corn & black beans in it & obviously tomatoes & tomato puree, onions, peppers,
sugar, vinegar, salt, garlic powder, cilantro & other seasonings.

Any suggestions on ammounts?

Do you think replaceing the sugar in it with splenda would be bad?

A lot of black bean & corn salsa's call for lime juice, but this doesn't say there is any in it - could/should I use some & or would using lemon juice instead work?

Oh yeah - & I'd like it to be a mild salsa, so keep that in mind please. :)

If anyone goes hunting for a recipe - things I do NOT want in it are:
avacado, jalapenos or anything hot, garlic cloves

Any help - advice whatever would be appreciated.

I found this, it sounds kinda close, no tomato stuff though. I'll keep searching.


Southwestern Salsa Salad


Preparation: 20 minutes


• 3/4 cup fresh corn kernels (about 1 ear)

• 1/2 chopped fresh cilantro

• 1/3 cup chopped green bell pepper

• 2 tablespoons finely chopped red onion

• 1 can (16 ounces) light red kidney beans, rinsed and drained

• 1/4 cup orange juice

• 2 tablespoons fresh lime juice

• 1 tablespoon fresh vegetable oil

• 1/4 teaspoon salt

• 4 drops hot pepper sauce

• 1/2 cup shredded reduced-fat sharp cheddar cheese

• 1/4 cup fat-free sour cream

• 4 ounces baked tortilla chips (about 40 chips)




Combine first 6 ingredients (through black beans) in a large bowl. Combine orange juice and next 4 ingredients (through hot sauce) in a jar, cover tightly, and shake vigorously.

Pour dressing over salad; toss well. Top with cheese and sour cream; garnish with chips. Serves 4.

This may not be what you're looking for but sounds yummy!!


Southwest Salsa Dip


1 3/4 cups salsa
3/4 cup black beans, drained
1/3 cup corn, drained
1 1/2 tablespoons cilantro
3/4 teaspoon lime juice
1/4 teaspoon cumin

Mix all ingredients together.

Chill.

Serve (works good with tortillas, but i like ritz crackers the best).

I found this one. Calls for garlic cloves though.

1 can black beans (drained and rinsed)
2 cups cooked corn
4 large tomatoes, seeded and diced
4 garlic cloves, peeled and crushed
1 onion, peeled and diced
1/2 cup parsley, stemmed and coarsely chopped
2 tablespoons ancho chile powder
1 tablespoon oregano
1 lime, juiced

Mix all ingredients together in a bowl. Let it sit for at least 15 minutes to meld flavors. Refrigerate overnight for maximum flavor.

Thank you very mucvh for your help guys I appreciate it.
I was however looking more for suggestions on ammounts on the ingrediants I'd listed instead of an already existing recipe (leaving out those I mentioned).

I'm still looking for ideas though.

Unfortunately, Jenn, recreating something in a jar using the ingredient list is next to impossible. The only thing I can give you, which you may already know, is the ingredients are listed according to how much is in the product.

If corn is the first, there is more corn than anything else and so on.

Your best bet is to find an existing recipe that closely matches what it is you're after and play with it. Add more of this or less of that and see what you come up with.

I went to the grocery yesturday and picked up some salsa.

Ortega Black Bean & Corn Salsa (mild)

Is that what you're talking about Jenn?

Mike - I know that. :o) I just figured someone could make suggestions on amounts.

Ruthie, the salsa we have is Wal-Mart brand called Southwest Black Bean & White Corn Salsa It's YUMMERS!

I guess I'll just experiment. Just figrued I'd check with fellow cookers/bakers for suggestions since I've never made salsa before. If I get something good &'ll share what I've come up with. WIsh me luck.

Dang it, Jenn!! I did a search and found a link to Wal-Mart's website with a bunch of recipes but the one you need isn't there!! Grrrrrrrrrr!! I thought I was going to surprise you!! Oh well...here's the link:
