So I'm making a Sarayashki deck and I want to use the card Watch.

How long does the effect last? The end of your opponent's next turn? End of the match? Not even the current rulings document specified that card.

the effect lasts as long as its an active item in the arena. the beginning of an attack step is before your opponent discards cards for attack cost. so you can attach items as long as watch is an active item in the arena and its before your opponent has discarded cards for attack costs.

I thought it would go straight to the discard pile after use and not be attached. I guess items and techniques are always attached unless the card states otherwise?

correct. if you had to discard the item it would day "Discard this item." like forlorn hope for example.
