(2) 10000: Trample: If this attack deals 2 or more points of damage to your opponent's fighter, you may choose to deal 1 of those points of damage to 1 of your opponent's Sideline characters instead of your opponent's fighter.

If your opponent's fighter has 3 points of damage and your Toguro's Trample attack is high enough to deal 2 points of damage, will you still be able to do 1 point to a sideline character?

No.

The reason being that you are not dealing two points of damage to your opponent's fighter. If they already have three points of damage on their fighter, you cannot do more than one point of damage to it. Younger Toguro, Soul Taker's Trample attack effect is activated after damage has been taken, so the effects of Trample will never be given a chance to activate.
