Tracey, I didn't forget you! I managed to get a hold of Chris's mom's cookbook the day before I left and got a few scone recipes. Hopefully they'll remind you of your Gran's. Plain Scones Time 10-15 minutes 425°F (220°C) 8oz (200g) plain flour 1t (1x 5ml.spoon) cream of tartar 1/2t (1/2x 5ml. spoon) bicarbonate of soda (baking soda) 1/2t (1/2x 5ml. spoon) salt 2 oz (50g) butter, margarine, or lard ¼ pint (150 ml) milk 1 oz (25g) caster sugar Method 1. Sift together the flour, cream of tartar, bicarbonate of soda, and salt, add sugar 2. Rub in fat and, using a knife, mix to a soft dough with the milk. 3. Turn onto a floured board, knead lightly and roll out to ½ inch (1cm) 4. Cut into rounds with a 2in (5cm) diameter cutter 5. Put the rounds on an ungreased baking tray, brush over with egg or milk and bake for 10-15 minutes at 425°F (220°C) Sultana (golden raisin) Scones Add 2oz (50g) sultanas to the above recipe before adding the milk. Brown Scones Time 10-15 minutes 425°F (220°C) 6oz (150g) wholemeal flour Pinch of salt 1/2t (1/2x 5ml. spoon) bicarbonate of soda (baking soda) 20z (50g) plain flour 1t (1x 5ml.spoon) cream of tartar 2 oz (50g) butter or margarine Milk to mix Method and cooking as for plain scones |

Sift the flour and salt together, rub in the fat and add the grated cheese, bicarbonate of soda, mustard and cayenne pepper. 2. Mix to a soft dough with the milk 3. knead lightly on a floured board and roll out to ¼ inch (1/2cm) thick 4. Cut into rounds with a 2in (5cm) diameter plain cutter, put onto an ungreased baking tray and bake for 10-15 minutes. |

Potato Scones Time 20 minutes 425°F (220°C) 12 oz (300g) cooked potatoes 2 oz (50g) butter or margarine 3oz (75g) flour Salt Method 1.Rub the potato through a wire sieve 2.Beat the fat to a cream and work in the potato, flour and salt 3.Roll out thinly, cut into round cakes, put onto a greased baking tray and bake for 20 minutes 4. butter the scones and serve hot. I hope to make some. Right now I am so busy with wedding stuff I just don't have time for myself and I am having a hard time staying away from goodies that I shouldn't eat right now so I figure if it's not in the house I won't eat it. I have however printed the receipes out and will for sure be making them. Probably around Thanksgiving. Thanks again Jules. |
